The restaurant, which is located in the heart of the city (we are in Porrione Street, few steps from Piazza del Campo) stands for the search of the traditions of the past, presented in the form of authentic dishes as simple and tasty. The work of Mauro Tigli is meticulous because it goes in search of the Sienese traditions of the past, when the ingredients were few and the food was really a primary need.
Even before the kitchen, that of the Gallo Nero is indeed a work that develops on the books, with the involvement of expert of medieval customs and consumption. Can be intuited from the entrance, looking at the sign made ??on the basis of the model asked by a landlord in 1400, or peering into the windows inside the room that are inspired the designs of Duccio da Buoninsegna.
In the table, then, each dish has its own story to tell, retracing the tracks that have been followed over the centuries. From wine to meat, from cereals to vegetables, through the olive oil and pecorino cheese until, of course, desserts. Every single dish evokes the history and traditions of the guests and is available via the tasting menu, delicious medieval banquets or themed evenings which dwell also on local products. Seated at a table at the Gallo Nero, you can make a real trip back in time as well as the atmosphere and the innkeepers are those typical of the Middle Ages.

The wines are an expression of the Gallo Nero and Siena's wine tradition. It is possible to find a good selection of Brunello di Montalcino, Nobile di Montepulciano, Chianti Classico, Chianti Colli Senesi and, as regards the white wine, the Vernaccia di San Gimignano. There were also some interesting labels for organic production.
