Cooking Lessons

The cooking lessons take place inside the restaurant and are made by the chefs of the Gallo Nero in collaboration with researchers at the University of Siena.

The course program includes the following topics: nutrition and food in the Middle Ages; description of the properties of foods, including legumes, vegetables, cereals, dairy products, meats, saltwater fish, freshwater fish and rivers, fresh fruit and dried spices and herbs, the order of discharge; habits and customs of being at the table.
Our chef will be available to illustrate some traditional dishes and medieval receips and participants at the course will be able to assist in the preparation of it. After the lesson, participants could attend a tasting dinner, and eating the dishes prepared during the lesson themselves.

Sienese tradition: the homemade pasta
The pici, tagliatelle, pappardelle, gnocchi and ravioli are the focus of these lessons. How to prepare it and how to spread it all strictly hand to enhance taste and flavor.

The Middle Ages on the table: a banquet of recipes
The cooking lessons are divided into five events, to better describe the medieval banquet and what was being prepared and served. You can book one or all 5 days.

The restaurant organizes cooking courses assigned to the chef of the restaurant in collaboration with researchers at the University of Siena to learn to cook like you once did. The main dishes of medieval and Sienese tradition are discussed in each step, so as to allow participants to learn all the secrets. The lessons are for individual or for group.
